Recipe ingredients
- Crêpes
- 2 eggs*
- 15 mL (1 tbsp) sugar*
- 2 mL (1/2 tsp) vanilla
- 175 mL (3/4 cup ) milk
- 30 mL (2 tbsp) unsalted butter, melted and cooled
- 250 mL (1 cup) peeled and shredded pear
- 175 mL (3/4 cup) flour*
- 1 pinch freshly grated nutmeg
- Butter* for cooking
- 375 mL (1 1/2 cups) shredded Canadian Gouda
- Spiced Fruit Compote
- 125 mL (1/2 cup) water
- 125 mL (1/2 cup) diced dried apricots
- 250 mL(1 cup) diced peeled apples
- 125 mL (1/2 cup) diced peeled pears
- 125 mL (1/2 cup) diced peeled peaches
- 60 mL (1/4 cup) honey*, maple syrup* or sugar*
- 1 cinnamon stick
- 2 whole cloves
- 45 mL (3 tbsp) orange juice
Preparation
Preheat oven to 190°C (375°F).
Crêpes
In a bowl, beat eggs with sugar and vanilla. Stir in milk, butter and shredded pear.
In a large bowl, combine flour and nutmeg. Make a well in centre and pour in egg mixture. Stir together until smooth.
In a frying pan over medium heat, melt a little butter and spoon in about 30 mL (2 tbsp) of crêpe batter to make about 20 small, thin crêpes, in several batches. Spread batter as needed with the back of a spoon. Cook about 2 minutes on each side or until crêpes are golden brown.
Layer 4 or 5 crêpes with cheese. Heat in oven for 3 to 4 minutes or until cheese starts to melt. Serve immediately with Spiced Fruit Compote.
Spiced Fruit Compote
In a saucepan, bring water to a boil. Remove from heat and add apricots. Set aside until apricots are rehydrated. Add fresh fruit, honey, spices and orange juice. Stir well.
Cook fruit over low heat until soft. Serve warm or cold.
Suggestion
TipThe Spiced Fruit Compote can be made ahead.
For a change of taste, try with Canadian Cheddar, Swiss, Mozzarella or Provolone.
