Recipe ingredients
- 12 oz (340 g) carrots
- 1/2 cup (120 ml) Irresistibles apricot nectar *
- 1/4 cup (60 ml) Irresistibles orange juice *
- 1/4 cup (60 ml) white wine
- 2 tbsp. (30 ml) apricot jam or 3 fresh apricots diced
- 2 tbsp. (30 ml) shallots, finely chopped
- Irresistibles nutmeg and cinnamon*, pinch each
- 1/2 tbsp. (7 ml) Irresistibles lemon butter *
- 1/2 tbsp. (7ml) fresh dill, finely chopped
- Salt and freshly ground pepper to taste
Preparation
Combine first 8 ingredients in a medium sized shallow saucepan.
Quickly bring to a boil. Cover with lid and simmer for approximately 10 minutes.
Remove lid and reduce liquid to a glaze (2 – 4 minutes).
Add butter and chopped dill.
Garnish with fresh dill.
Season to taste.
