Recipe ingredients
- 2 Tbsp. (30 mL) butter
- 1/2 cup (125 mL) shallots, thinly sliced
- 1 clove of garlic, chopped
- 1/2 yellow pepper, cut in small cubes
- 1 8-oz. (227 g) container mushrooms, sliced
- 1 small tomato, deseeded, cut in small cubes
- 5 Tbsp. (75 mL) all-purpose flour*
- 2 cups (500 mL) hot milk
- 3/4 cup (175 mL) Quebec emmental cheese, grated
- 2 cups (500 mL) cooked ham*, cut in small cubes
- 1/4 cup (60 mL) fresh chopped coriander or fresh parsley
- 8 tortillas*
Preparation
Preheat the oven to 375ºF (190ºC).
Stir-fry the shallots, garlic, pepper, mushrooms and tomato in the butter for 3 to 4 minutes.
Sprinkle on the flour, and cook over low heat for 1 minute, stirring constantly.
Add the hot milk gradually and cook over low heat until the sauce thickens, about 4 minutes.
Add the cheese, ham and coriander.
Continue cooking for 1 minute.
Wrap the tortillas in tin foil and place in the oven for 4 to 5 minutes.
Arrange the ham-based mixture in the centre of each tortilla and roll like crêpes.
Garnish with fruit salsa.
