Recipe ingredients

  • 8 cups (2 L) water
  • 2 lbs. (900 g) fresh pork spare ribs
  • 1 onion, quartered
  • 1 bouquet garni
  • 1 bay leaf
  • Salt and pepper to taste
  • 3 Tbsp. (45 mL) extra virgin olive oil
  • 1/2 cup (125 mL) red wine
  • 1/2 cup (125 mL) brown sugar
  • 1 cup (250 mL) fresh or frozen raspberries
  • 2 Tbsp. (30 mL) Worcestershire sauce
  • 1 cup (250 mL) medium rib sauce

Preparation

In a pan, bring water to a boil. Add spare ribs, onion, bouquet garni, bay leaf, salt and pepper.
Simmer 45 minutes. Drain and set aside.
Preheat the barbecue to medium.
In a glass bowl, combine all barbecue glaze ingredients.
Place spare ribs on a sheet of oiled aluminium foil and brush with glaze.
Cook 5 to 7 minutes on each side.

Suggestion

When making glaze, use port in place of red wine.
