Recipe ingredients

  • 8 cups (2 L) water
  • 2 lb. (900 g) fresh pork spare ribs
  • 1 onion, quartered
  • 1 bouquet garni
  • 1 bay leaf*
  • Salt and pepper to taste
  • 3 Tbsp. (45 mL) sunflower oil*
  • 2 Tbsp. (30 mL) tomato paste*
  • 1 tsp. (5 mL) cinnamon*
  • 1 Tbsp. (15 mL) powdered mustard*
  • 1 cup (250 mL) apple jelly
  • 1/4 cup (60 mL) soy* or Worcestershire sauce
  • 1 cup (250 mL) orange juice* diluted in an equal amount of water

Preparation

In a pan, bring water to a boil. Add spare ribs, onion, bouquet garni, bay leaf, salt and pepper.
Simmer 30-45 minutes. Drain and set aside.
Preheat the barbecue to medium ou oven "broil".
In a glass bowl, combine all sauce ingredients.
Place spare ribs on a sheet of oiled aluminium foil and brush with sauce.
Cook 5 to 7 minutes on each side.
Serve with tarragon rice.

Suggestion

The flavour of apple is perfect with pork. For a more flavourful basting sauce, add 1 Tbsp. (15 mL) fresh chopped basil.
