Recipe ingredients

  • 8 cups (2 L) water
  • 2 lb. (900 g) fresh pork spare ribs
  • 1 onion, quartered
  • 1 bouquet garni
  • 1 bay leaf
  • Salt and pepper to taste
  • 3 Tbsp. (45 mL) sunflower oil
  • 3 Tbsp. (45 mL) blueberry honey
  • 1/4 cup (60 mL) chili sauce
  • 2 tsp. (10 mL) grated fresh ginger
  • 2 cloves garlic, chopped
  • 1/2 cup (125 mL) dried pitted dates, chopped
  • 1/4 cup (60 mL) white wine
  • Salt and pepper to taste

Preparation

In a pan, bring water to a boil. Add spare ribs, onion, bouquet garni, bay leaf, salt and pepper.
Simmer 45 minutes. Drain and set aside.
Preheat the barbecue to medium.
In a pan, combine all sauce ingredients. Bring to a boil and simmer 2 minutes.
Place spare ribs on a sheet of oiled aluminium foil and brush with sauce.
Cook 5 to 7 minutes on each side.

Suggestion

Pork is delicious cooked with any dried fruit. You can use prunes, figs or raisins instead of dates.
