Recipe ingredients
- 4 leaves green cabbage
- 1/2 cup (125 mL) toasted pine nuts
- 1 onion, minced
- 2 cloves garlic, chopped
- 4 fresh pork cutlets, 4 to 5 oz. (120 to 150 g) each
- 1 Tbsp. (15 mL) paprika
- 1 pinch ground cinnamon
- 1/4 cup (60 mL) cider
- 2 tsp. (10 mL) curry powder
- 1 tsp. (5 mL) ground ginger
- 2 Tbsp. (30 mL) brown sugar
- 1 tsp. (5 mL) fresh chopped thyme
- Salt and pepper to taste
Preparation
Blanch cabbage leaves.
Preheat the barbecue to medium.
In a bowl, combine pine nuts, onion and garlic.
Put a cabbage leaf on each cutlet and top with pine nut mix.
Roll each cutlet and skewer to keep closed.
Blend sauce ingredients and brush on rolls.
Cook rolls 15 to 20 minutes, turning often and basting while cooking.
Suggestion
Look for cutlets about 1/4 in. (6 mm) thick. If too thin, too thick or not uniformly thick, they will be hard to handle and cook evenly.* We recommend Selection and Irresistibles products.
