Recipe ingredients
- As needed Canola oil* or melted butter*
- 1 Large egg *
- 1 whole wheat English muffin *
- Sufficient quantity, mild salsa *
- Grated cheese mix for nachos*
Preparation
In a deep ramekin (custard cup), add oil or melted butter. Break the egg and beat it to break up the yolk. Cover with a paper towel.
Cook in the microwave at medium heat for 1 minute. When the egg is cooked, take it out of the microwave and remove it from the ramekin.
Put the egg on a toasted English muffin. Put some salsa in the middle. Add grated cheese mix for nachos.
Garnish with lettuce and sliced tomato.
