Recipe ingredients
- 1 300-g box chicken and fennel perline*
- 3½ cups (900 mL) ready-to-use chicken broth*
- 1/4 cup (60 mL) finely diced leek
- 1/4 cup (60 mL) finely diced carrot
- 1/4 cup (60 mL) finely diced zucchini
- 1/4 cup (60 mL) finely diced red pepper
- 8 Swiss cheese sticks*
- Chopped chives for garnish
Preparation
Cook chicken and fennel perline in boiling salted water for about 3 minutes, rinse under cold running, and drain. Set aside.
Bring chicken broth to a boil.
Add diced vegetables and cook until tender, about 5 minutes.
Warm soup plates in the oven.
Spoon perline into plates and add piping hot broth.
Serve with 2 cheese sticks.
Serve immediately.
