Recipe ingredients

  • 4 pork tournedos, 4 to 5 oz. (120 à 150 g.) 3/4 in. (2 cm) thick each
  • Sauce
  • 3 Tbsp. (45 mL) extra virgin olive oil
  • 2 red onions, chopped
  • 1 hot red pepper, chopped
  • 1/4 cup (60 mL) cider vinegar
  • 1/4 cup (60 mL) chili sauce
  • 3 Tbsp. (45 mL) maple jelly or syrup
  • 1/2 cup (125 mL) mayonnaise
  • Salt and pepper to taste

Preparation

Preheat the barbecue to medium.
In a pan, combine all sauce ingredients.
Bring sauce to a boil, remove from heat and set aside.
Brush tournedos with sauce as needed.
Grill tournedos about 5 minutes on each side, to taste.
Baste tournedos during cooking.
Pour remaining sauce on each plate and top with tournedos.

Suggestion

For a lighter Angela sauce, use light mayonnaise or replace half of the mayonnaise with plain yoghurt.
