Recipe ingredients

  • 9 European sausages
  • 1 papaya, cubed
  • 1 can litchis, drained
  • Sauce
  • 2 Tbsp. (30 mL) liquid honey*
  • 1/4 cup (60 mL) sugar*
  • 1 tsp. (5 mL) mustard seeds or Meaux mustard
  • 2 cloves garlic, chopped
  • 1/4 cup (60 mL) white wine vinegar
  • 1/2 cup (125 mL) extra virgin olive oil*

Preparation

Preheat the barbecue to medium.
Prick sausages with a fork and blanch in boiling water 5 minutes. Drain and cut in 3.
Thread sausage chunks on brochettes, alternating with papaya and litchis. Set aside.
In a pan, combine sauce ingredients and bring to a boil. Simmer 1 to 2 minutes and keep hot.
Brush sausage brochettes with hot sauce.
Cook brochettes 6 to 10 minutes, turning often.
Baste brochettes during cooking.

Suggestion

Blanch sausages to keep from splitting on the barbecue.
