Recipe ingredients

  • 60 mL (4 Tbsp.) olive oil*
  • 1/4 cup (60 mL)
  • 1 tsp. (5 mL) paprika
  • 1/2 tsp. (2 mL) fresh or dried thyme
  • 1/4 tsp. (1 mL) garlic powder
  • 3 pita breads about 5” (13 cm), cut into 6 wedges
  • 7 oz. (200 g) spreadable goat cheese
  • 2 medium beets, cooked, peeled and thinly sliced

Preparation

Preheat the oven to 190ºC (375ºF).

In a bowl, mix the oil with the spices.

On a baking sheet, spread out the pita wedges and baste them with the flavoured olive oil. Set aside the remaining oil.

Bake in the oven for about 8 minutes, or until the pitas are lightly browned and crisp.

In 4 plates, place a small spoonful of the goat cheese, top with a pita wedge, then garnish with a beet slice. Repeat twice more for each plate.

Drizzle each dish with the remaining flavoured oil and serve.
