Recipe ingredients
- 1 whole barramundi, scaled and gutted
- 3 Tbsp. (45 mL) Irresistible extra virgin olive oil*
- Spice-crusted
- 2 Tbsp. (30 mL) Irresistible paprika*
- 1 tsp. (5 mL) salt
- 1 tsp. (5 mL) Irresistible onion powder*
- 1 tsp. (5 mL) Irresistible garlic powder*
- 1/2 tsp. (2 mL) Irresistible white pepper*
- 1/2 tsp. (2 mL) Irresistible black pepper*
- 1/2 tsp. (2 mL) Irresistible thyme*
- 1/2 tsp. (2 mL) Irresistible oregano*
- 1 Tbsp. (15 mL) Cajun spice
- Mediterranean salad
- 1 green onion, sliced
- 1 green pepper, cut into strips
- 4 tomatoes, halved and semi-dried
- 1/2 cup (125 mL) feta* , cut into ½-inch (1 cm) cubes
- 1/2 cup (125 mL) pitted Kalamata olives
- 1 cup (250 mL) snow peas
- 1 Tbsp. (15 mL) crushed garlic
- 1 Tbsp. (15 mL) butter*
Preparation
In a bowl, mix all the herbs and spices together.
In a heavy-botomed frying pan, heat the olive oil to medium-high.
Place the barramundi into the seasoning.
Carefully place the barramundi into the oil.
The spices will go black. Once the spices have changed colour, turn over and continue cooking the fish for 3 to 6 minutes, depending on the thickness. Set aside and keep warm.
Salad
In a frying pan, melt the butter and sauté all the ingredients, except for the feta.
Toss in the feta, and spoon onto a serving plate.
Place the fish on top, drizzling with olive oil.
