Recipe ingredients
- 1 fennel bulb
- 1 large onion
- 30 mL (2 Tbsp.) Irresistibles extra virgin olive oil*
- 1 garlic bulb
- 10 whole black peppercorns
- 2.5 mL (1/2 tsp.) anise seeds
- 125 mL (1/2 cup) white wine or apple juice*
- 500 mL (2 cups) vegetable broth
- 4 tilapia fillets
Preparation
Mince the fennel heart and onion.
In a casserole, brown the fennel and onion for 1 minute in the olive oil.
Add the garlic, peppercorns, anise and white wine.
Cook over low heat for 5 minutes.
Add the vegetable broth and heat to boiling.
Add the tilapia fillets and lower the heat. Cover and let simmer over low heat for 5-8 minutes.
Adjust the seasoning and serve.
Suggestion
Keep the fennel stalks; they’re stringy and great for making soup.* We recommend Selection and Irresistibles products.
