Recipe ingredients

  • 1 fennel bulb
  • 1 large onion
  • 30 mL (2 Tbsp.) Irresistibles extra virgin olive oil*
  • 1 garlic bulb
  • 10 whole black peppercorns
  • 2.5 mL (1/2 tsp.) anise seeds
  • 125 mL (1/2 cup) white wine or apple juice*
  • 500 mL (2 cups) vegetable broth
  • 4 tilapia fillets

Preparation

Mince the fennel heart and onion.
In a casserole, brown the fennel and onion for 1 minute in the olive oil.
Add the garlic, peppercorns, anise and white wine.
Cook over low heat for 5 minutes.
Add the vegetable broth and heat to boiling.
Add the tilapia fillets and lower the heat. Cover and let simmer over low heat for 5-8 minutes.
Adjust the seasoning and serve.

Suggestion

Keep the fennel stalks; they’re stringy and great for making soup.
