Recipe ingredients
- 1 Tbsp. (15mL) Irresistible olive oil*
- 2 tsp. (10 mL) butter*
- 4 5-oz. (150-g) turkey cutlets
- 2 tsp. (10 mL) chopped shallot
- 1 lemon, zest and juice
- 1/3 cup (80 mL) chicken or turkey stock
- 1/4 cup (60 mL) 35% m.f. whipping or cooking cream
- Salt and pepper to taste
- 1 Tbsp. (15mL) chopped basil
Preparation
In a skillet, heat oil and butter on medium heat.
Brown cutlets 2 minutes per side. Remove and keep warm.
Add shallots to skillet and cook 1 minute.
Add lemon juice and stock and reduce by half.
Stir in cream and lemon zest and cook for 2 - 3 minutes.
Pour sauce over cutlets and sprinkle with chopped basil.
