Recipe ingredients
- 1 Tbsp. (15 mL) butter*
- 1 carrot, diced
- ˝ red onion, diced
- 2 stalks celery, diced
- 1 leek, white part only, diced
- 1/2 tsp. (2 mL) curry
- 3 cups + 2 Tbsp. (900 mL) ready-to-serve light chicken broth*
- 1 cup (250 mL) diced tomatoes*, drained
- 1 19-oz. (540-mL) can lentils*, drained
- 2 mild Italian sausages*, blanched and sliced (optional)
- Irresistible Mezzo olive oil as needed
- Salt and pepper to taste
Preparation
Melt butter in a saucepan. Add diced vegetables. Cover and sweat over medium heat for about 3 minutes. Stir curry into vegetables.
Add chicken broth and drained tomatoes and cook 15 minutes or so over medium heat until vegetables are tender. Add drained lentils and cook for about 5 minutes.
Meanwhile, in a skillet brown sausages in Mezzo olive oil.
Serve soup piping hot and garnish with sausage slices.
Suggestion
