Recipe ingredients
- 1/4 cup (60 mL) concentrated orange juice*
- 4 Tbsp. (60 mL) marmalade
- 1 Tbsp. (15 mL) canola oil*
- 1 Tbsp. (15 mL) chili sauce
- 2 tsp. (10 mL)dried mustard*
- 1 tsp. (5 mL) Worcestershire sauce
- 1 garlic clove, pressed
- 1 lb (454 g) pork cubes
- 1 average size onion, cut in pieces
- 1 zucchini squash, cut in segments
- 8 mushrooms
- Fresh ground black pepper and salt
Preparation
Mix the concentrated orange juice with the marmalade, oil, chili sauce, dry mustard, Worcestershire sauce and garlic.
Add the pork cubes. Cover and let marinate in the refrigerator for 20 minutes. For more flavour, let marinate for 1 to 6 hours.
Skew the cubes on brochettes while alternating the vegetables. Add pepper as desired. Grill over medium heat on the barbecue, under the oven grill or in a grill pan for 8 to 10 minutes.
Halfway through cooking, turn over with tongs and brush over with marinade.
Add salt after cooking.
