Recipe ingredients

  • 3 lb. (1.5 kg) lean pork, cubed
  • Sufficient quantity, oil*
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 celery stalks, finely sliced
  • 4 garlic cloves, chopped
  • 2 onions, chopped
  • 1 tsp. (5 mL) grated fresh ginger
  • 19 oz. (540 mL) tin diced pineapple in juice*
  • 2 cups (500 mL) chicken broth*
  • 1/2 cup (125 mL) vinegar*
  • 1/2 cup (125 mL) sugar*
  • Irresistible* salt and pepper to taste
  • Sufficient quantity, cornstarch*

Preparation

In a large saucepan, sear the meat in the oil until it’s no longer pink.

Add the vegetables, ginger, pineapple, broth, vinegar, sugar, salt and pepper, and cook until tender.

Thicken the sauce with the cornstarch to the desired consistency.

Serve over cooked rice.

Suggestion

The combination of pork with fruit is usually reserved for special occasions.

You can substitute canned, sliced and drained peaches, nectarines or mangoes for the pineapple.
