Recipe ingredients
- 1 x 1 lb. 3 oz. - 1 1/2 lb. (1 x 600-700 g) salmon fillet with skin
- 1 unvarnished cedar plank, 1 in. (2.5 cm) thick, about 6 in. (15 cm) wide, and 4 in. (10 cm) shorter than the width of the barbecue
- Marinade
- 2 Tbsp. (30 mL) lemon juice
- 1/3 cup (80 mL) olive oil Irresistible*
- 3 Tbsp. (45 mL) minced shallot
- 3 Tbsp. (45 mL) chopped ginger
- To taste salt and pepper
Preparation
Prepare the cedar plank by soaking it in water for at least 5 hours before use.
This procedure keeps the plank from burning during cooking
and allows it to be reused regularly.
Preheat the barbecue to high.
Remove the fish from the marinade and sponge off well. Place the skin
side on the plank, then place the plank directly on the barbecue grill.
Reduce the temperature to the lowest setting and cover. Cook the fish for 7 to 8 minutes per inch (2.5 cm). It’s about 12 minutes for the average salmon fillet. Do not turn the fish as it cooks.
Marinade
Mix all the marinade ingredients in a bowl and place the fillet in the marinade, meat side down. Let sit for 30 minutes.
