Recipe ingredients

  • 1 lb. (454 g) lean ground beef Red Grill Angus
  • 1 Tbsp. (15 mL) finely chopped sun-dried tomatoes in oil
  • 1 tsp. (5 mL) lemon zest
  • 1 tsp. (5 mL) finely chopped jalapeño pepper
  • Salt and pepper to taste
  • Basil-tomato mayonnaise
  • 1/2 cup (125 mL) mayonnaise*
  • 2 Tbsp. (30 mL) finely chopped fresh basil
  • 1/2 tsp. (2 mL) tomato paste*
  • 2 Tbsp. (30 mL) seeded, finely diced fresh tomato
  • Salt and pepper to taste

Preparation

Mayonnaise preparation
Combine all the ingredients. Let sit for 30 minutes. The mayonnaise will keep for a few days.

In a large bowl, mix the beef and the other ingredients.

Shape into patties 1/2 in. (1 cm) thick.

Preheat the barbecue to medium.

Grill the patties until the internal temperature is 160°F (70°C) or until the cooking juices released are clear and no longer pink.

Turn the patties over just once when half-cooked; while cooking, avoid pressing the meat with a spatula so that the meat stays tender.

Hamburger presentation
Cut an onion kaiser roll in half and grill lightly.

Place a portion of spinach leaves on the bottom half and top with a grilled hamburger.

Add the basil-tomato mayonnaise, as desired.
