Recipe ingredients

  • 3 Tbsp. (45 mL) olive oil*
  • 4 opah fillets
  • 5 oz. (150 g) fresh portobello mushrooms, in pieces
  • 6 oz. (200 g) fresh oyster mushrooms, in pieces
  • 1/4 cup (60 mL) butter*
  • 1/2 red pepper, chopped
  • 1/2 yellow pepper, chopped
  • 1 Tbsp. (15 mL) chopped fresh rosemary
  • 1 Tbsp. (15 mL) chopped fresh chives
  • 1 Tbsp. (15 mL) chopped fresh parsley
  • Salt and pepper to taste

Preparation

Preheat the oven to 300ºF (150ºC).

Heat 1 Tbsp. (15 mL) of the olive oil at medium-high heat in a large frying pan.

Cook the opah steaks for 2 minutes per side. Remove and set aside in the warm oven.

Add 1 Tbsp. (15 mL) of the olive oil in the pan; raise heat to high and fry the portobello mushrooms for 3 minutes per side. Season and set aside with the fish.

Repeat this procedure with the oyster mushrooms.

Melt the butter and remaining 1 Tbsp. (15 mL) of the olive oil in the pan; add the peppers and fine herbs; mix well. Cook for 2 minutes.

Serve the opah with the mushrooms, pepper mix and fine herbs.
