Recipe ingredients

  • 1 lb. (454 g) opah or moonfish fillets
  • 1 package linguini*
  • 2 Tbsp. (30 mL) olive oil*
  • 1/2 onion, thinly sliced
  • 1 garlic clove, minced
  • 1 Tbsp. (15 mL) butter, melted
  • 2 Tbsp. (30 mL) sun-dried tomatoes
  • 2 Tbsp. (30 mL) capers*
  • 1/4 cup (60 mL) grated parmesan cheese
  • 1/2 tsp. (2 mL) salt
  • 1 Tbsp. (15 mL) chopped fresh parsley

Preparation

Cut the fillets into cubes.

Cook the linguini according to package directions; drain and keep warm.

Heat 1 Tbsp. (15 mL) of the olive oil in a large frying pan. Add the onion and garlic and cook until golden brown; set aside.

Heat the remaining 1 Tbsp (15 mL) olive oil and butter in the frying pan and sauté the opah cubes for 2 minutes or until they flake easily with a fork.

Add the onion mixture, sun-dried tomatoes, capers, parmesan and salt; toss gently.

Serve the opah over the linguini and sprinkle with the parsley.
