Recipe ingredients
- 2 lemons, peeled, pith removed and seeded
- 1/4 cup (60 mL) honey*
- 1/3 cup (80 mL) Irresistibles peanut butter*
- 2 tsp. (10 mL) Irresistibles curry powder*
- 1 tsp. (5 mL) toasted sesame oil
- 1/2 tsp. (2 mL) hot sauce (harissa)
- 1 1/2 lb. (675 g) Red Grill Angus cubed beef (1 in./2cm)
- 1 red pepper, cubed
- 1 onion, cubed
- Salt and pepper to taste
Preparation
Purée lemons in food processor.
Add honey, peanut butter, curry powder, sesame oil and hot sauce, and blend.
Pour half of this mixture into a pan, add meat, cover and marinate in the refrigerator for about 2 hours.
Reserve remaining mixture.
Preheat oven to 375OF (190OC).
Arrange meat, pepper and onion cubes on skewers, alternating the three and leaving a bit of space between them for even cooking.
Discard marinade.
Season the brochettes and place them in a pan or on a baking sheet.
Roast 12 – 15 minutes, turning brochettes at halfway point.
Serve on abed of lettuce and drizzle with reserved lemon mixture.
