Mackerel with apples and apple cider in foil packages

Recipe ingredients
- 4 mackerel, cut into fillets
- 2 Tbsp. (30 mL) olive oil*
- 8 sprigs of mint, leaves thinly cut
- 2 apples, unpeeled, thinly sliced
- 1/2 cup (120 mL) apple cider
- 1/4 cup (60 mL) crème fraîche
- Salt and pepper to taste
Preparation
Preheat the oven to 400ºF (200ºC).
Cut 4 rectangles of aluminium foil large enough to generously wrap two fillets per person.
Brush the foil with oil and place two fillets side by side, skin side down, on the foil.
Sprinkle mint over the fillets and spread the apple slices to cover the fillets.
Pour some apple cider and then a little crème fraîche. Season with salt and pepper to taste.
Seal the packages tightly by folding in the edges. Bake in the oven for 12 to 15 minutes, depending on the size of the fillets.
Serve with hash brown potatoes.
