Recipe ingredients

  • 3 Tbsp. (45 mL) extra-virgin olive oil
  • 1 medium onion, minced
  • 1 clove garlic, chopped
  • 1/2 cup (125 mL) chopped dried tomato
  • 1 zucchini, cubed
  • 1 red pepper, cubed
  • 1/2 cup (125 mL) whole pitted black olives
  • 3/4 cup (180 mL) prepared garlic chive dressing
  • Salt and pepper to taste
  • 1 lb. (450 g) monkyfish fillets
  • Juice of 1/2 lemon

Preparation

In a pan, brown vegetables in oil, add dressing and season. Cook 2 minutes.
Sprinkle fillets with lemon juice.
Place the filets on the vegetables. Cover and cook 2 to 3 minutes over medium heat.

Suggestion

Sprinkle fish filets with lemon juice to keep firm.
