Recipe ingredients

  • 1 1/2 lb. (675 g) Red Grill Angus top sirloin 1 in. (2 cm) cubes
  • 2 small zucchini, cut into medium-size dice
  • 6 shallots, cut in half
  • Salt and pepper to taste
  • 4 garlic cloves, chopped 
  • 3/4 cup (180 mL) Irresistible * oregano sun-dried tomato vinaigrette
  • 1 small onion, grated
  • 1 basil bouquet, chopped
  • 1 lemon, juiced
  • 2 tsp. (10 mL) tomato paste *
  • Herbes de Provence to taste

Preparation

In a bowl, combine all the marinade ingredients.

Place the beef cubes and vegetables and marinate for an hour or more.

Preheat the barbecue or oven grill.

Assemble the brochettes on skewers, alternating the vegetables and beef cubes.

Season the brochettes.

Grill the beef to the desired degree of doneness.

Sprinkle herbes de Provence over the beef cubes.

Suggestion

Marinade:  1 hour.

Accompany the brochettes with a garden salad.

For oven cooking, cover the tips of wooden skewers with foil paper to prevent burning.

Sear the assembled brochettes in a frying pan, drizzle with the marinade and finish cooking in the oven.

As these beef cubes are very lean, they make delicious brochettes or fondue bourguignonne.
