Hazelnut-Crusted Roasted Brome Lake Duck Breasts

Recipe ingredients
- 2 x 12 oz. (2 x 330 g) boneless Brome Lake duck breasts
- Salt and ground black pepper to taste
- Sufficient quantity, Irresistible * extra-virgin olive oil
- 1 oz. (30 g) crustless baguette, sliced ½ in. (1 cm) thick
- 3 Tbsp. (45 mL) roasted, crushed hazelnuts
- ¼ tsp. (1 mL) orange zest, finely chopped
- 1/2 garlic clove, finely chopped
- 2 sprigs of fresh marjoram or thyme, finely chopped
- 2 Tbsp. (30 mL) honey *
Preparation
Preheat the oven to 350ºF (180ºC).
Make incisions in a grid pattern on the breast skin. Season.
Preheat a frying pan over medium heat; place the breasts skin side down.
Cook for 10 minutes or until the skin turns golden brown. Turn over, meat side down, and cook for 30 seconds.
Place the breasts, meat side up, on a baking sheet. Cook in the oven for 5 minutes. When the breasts are cooked medium, keep warm and set aside for 5 minutes.
For the hazelnut crust: brown the bread on both sides in the olive oil.
Drain on a paper towel.
Reduce the baguette to coarse crumbs in a food processor. Add the remaining ingredients, but not the honey.
Pulse a few times to combine the ingredients well.
Use a spoon to baste the breast skin with the honey. Cover each breast with 2 Tbsp. (30 mL) of the hazelnut crumb mixture.
Slice the breasts thinly, and serve with the duck pan juices flavoured with a few drops of hazelnut oil.
Suggestion
It’s important to start by cooking the breasts, skin side down, and cook them for a long time so that most of the fat under the skin is released.
What you’re trying to do, whether pan-frying or roasting duck breast, is to get crisp browned skin and pink, juicy meat.
To keep the breasts warm, wrap them loosely in aluminium foil and let rest for 5 minutes.
