Recipe ingredients

  • 454 g strawberries, cut into brunoise (very small dice)
  • 1/2 cantaloupe, cut into brunoise
  • 1 Tbsp. (15 mL) grated or finely chopped fresh ginger
  • 1 Tbsp. (15 mL) Irresistibles rice vinegar or white wine vinegar*
  • 1 Tbsp. (15 mL) lime juice 
  • 1/4 cup (60 mL) Irresistibles olive oil* 
  • 1/4 cup (60 mL) finely cut fresh coriander
  • 2 - 3 endives 
  • Salt and freshly ground pepper to taste

Preparation

In a bowl, gently mix the strawberries, cantaloupe, ginger, vinegar, lime juice, oil and coriander. Season with salt and pepper and let rest for 15 minutes at room temperature. Cut off the base of the endives; remove 30 leaves. Place 1 Tbsp. (15 mL) of the fruit tartar on each leaf and garnish with small fresh coriander leaves.Serve right away.
