Recipe ingredients
- 2 ready-to-cook trout rolls (tournedos)
- 1 Tbsp. (15 mL) Butter*
- 1 Tbsp. (15 mL) Irresistibles extra virgin oil*
- 2 shallots, minced
- 1/4 cup (60 mL) white wine
- 1 Tbsp. (15 mL) chopped fresh parsley
- 1 Tbsp. (15 mL) chopped fresh basil
- Salt and pepper to taste
Preparation
Preheat oven to 350ºF (180ºC).
Place roll in a baking dish and bake 10 - 15 minutes.
In a pan, heat butter and oil over medium heat, and sweat shallots.
Deglaze pan with wine, add herbs and season to taste.
Reduce to desired thickness.
Take the roll out of the oven, remove string, spoon sauce over them and serve.
Suggestion
If dried herbs are used, reduce quantities to 2 tsp. (10 mL) each.
For fish, cooking time is based on thickness not weight. Measure the fish where it’s thickest and calculate 5 minutes per centimetre or 8 to 10 minutes per inch of thickness.
