Recipe ingredients
- 1 Tbsp. (15 mL) Merit Selection organic butter
- 1 carrot, diced fine
- ½ red onion, diced fine
- 2 stalks celery, diced fine
- 1 leek, white part only, diced fine
- ½ tsp. (2 mL) organic curry powder
- 3 cups + 2 Tbsp. (900 mL) Campbell’s Organic Free Range Chicken Broth
- 1 cup (250 mL) Bioitalia organic chopped tomatoes, drained
- 1 19-oz. (540-mL) can Bioitalia organic lentils, drained
- Salt and pepper or Herbamare organic herb seasoning salt to taste
Preparation
Melt butter in a saucepan.
Add diced vegetables.
Cook vegetables covered on medium for about 3 minutes to sweat them.
Stir in curry powder.
Add chicken broth and tomatoes, and cook on medium for 15 minutes or until vegetables are tender.
Add lentils and cook about 5 minut
