Recipe ingredients
- 1 cup (250 mL) Merit Selection all-purpose flour
- ¾ cup (180 mL) organic whole-wheat flour
- 1 pinch salt
- ½ tsp. (2 mL) organic cinnamon
- 2 Tbsp. (30 mL) Lantic organic sugar
- 1 Tbsp. (15 mL) Merit Selection baking powder
- 2 organic eggs, lightly beaten
- 2 Tbsp. (30 mL) Merit Selection organic butter, melted
- ½ cup (125 mL) Nature’s Path instant oatmeal
- 2 ¼ cups (560 mL) 2% Liberté organic milk
- Sufficient quantity, Merit Selection butter or Merit Selection canola oil
Preparation
In a bowl, mix flours, salt, cinnamon, sugar and baking powder together.
Make a well in the middle, and add beaten eggs and melted butter.
Stir with a fork until just combined.
In another bowl, soak oatmeal in first quantity of milk (1 ¾ cups or 330 mL). Let sit 5 minutes.
Stir oatmeal into batter. Add second quantity of milk (approximately ½ cup or 125 mL), little by little, until batter is of right consistency.
In a skillet, heat butter or oil on medium. Ladle a small quantity of batter into the skillet and cook 1 - 2 minutes until underside is browned.
Flip and cook for 30 - 45 seconds more.
