Recipe ingredients
- 1x 5 lb. (2.5 kg) ham picnic with bone
- 2 cups (500 mL) apple juice*
- 1 cup (250 mL) maple syrup*
- Pepper to taste
- A few Irresistibles whole cloves*
- 1/2 tsp. (2 mL) Irresistibles ground cloves
- 1 tsp. (5 mL) Irresistibles mustard seed*
- 1 tsp. (5 mL) Irresistibles ground ginger*
- 1/4 cup (60 mL) cider vinegar
Preparation
In a large casserole, half cover the ham in fresh water.
Add the apple juice, 1/2 cup (125 mL) of maple syrup, pepper, ground and whole cloves, mustard seed and half the ginger.
Bring to a boil over medium heat, then let simmer over low heat for 30 to 40 minutes.
Preheat the oven to 275°F (140°C).
Place the ham in a roasting pan. Mix remaining ingredients with the maple syrup and pour the mixture on the ham.
Place in the oven for about 90 minutes (or until your meat thermometer reaches 140°F (60°C).
Baste the ham frequently during cooking. Add a little water if the cooking juice gets too thick or if it tends to caramelize.
When the ham is cooked, serve it hot in thin slices basted in its cooking juices.
