Recipe ingredients

  • 1 Tbsp. (15 mL) chopped shallots
  • 2 Tbsp. (30 mL) walnut oil
  • ½ lb. (225 g) chicken livers, nerves trimmed
  • ½ tsp. (2.5 mL) chopped garlic clove
  • 1 pink grapefruit, zest and skinless segments
  • 1 navel orange, zest and skinless segments
  • 1 lime, zest and skinless segments
  • 1 Tbsp. (15 mL) white wine vinegar
  • 1 tsp. (5 mL) maple syrup*
  • Salt and pepper to taste

Preparation

Brown the shallots in the walnut oil.

Add the chicken livers and cook for 2 minutes.

Add the garlic and citrus segments. Cook for 1 minute.

Blend in the wine vinegar and maple syrup.
Adjust the seasoning.

Serve right away on a bed of lettuce.   Garnish with the citrus zests.

Suggestion

To soften the taste of liver, soak it in milk for 20 minutes.

Accompaniments:  spring lettuce mix and bocconcini cheese.

Full-bodied white wine or light red wine.
