Almond Peach Pie

Recipe ingredients
- 1 prepared pie shell
- 8 canned peach halves in light syrup
- 3 eggs
- 1/4 cup (60 mL) sugar
- 1 1/4 cup (310 mL) milk
- 1 Tbsp. (15 mL) cornstarch
- 1/2 tsp. (2 mL) vanilla extract
- 1/2 cup (125 mL) slivered almonds
Preparation
Preheat oven to 350°F / 180°C.
Bake pie shell 15 minutes. Remove and set aside.
Arrange peach halves in shell.
In a bowl, beat eggs, sugar, milk and cornstarch together well.
Microwave at high 1 1/2 minutes. Remove and whisk well.
Microwave 1 more minute until smooth. Remove and whisk in vanilla extract.
Pour custard over peaches.
Garnish with almonds and bake on lower rack 30 minutes.
Suggestion
If using fresh peaches, blanch 1 minute in boiling water to make them easier to peel.* We recommend Selection and Irresistibles products.
