Bison Thigh Steaks with Sesame Seeds

Recipe ingredients
- 2 Tbsp. (30 mL) whole wheat flour*
- A pinch Irresistibles sea salt*
- A pinch ground white pepper
- 2 eggs*
- 1 Tbsp. (15 mL) first pressing sesame oil
- ¼ cup (60 mL) sesame seeds
- 2 tsp. (10 mL) poppy seeds
- 4 bison thigh steaks
- 3 Tbsp. (45 mL) first pressing sesame oil
Preparation
In a bowl, combine the flour, salt and pepper. Set aside.
In a bowl, beat the eggs with the oil. Set aside.
In a bowl, combine the sesame and poppy seeds. Set aside.
Dredge the bison steaks in the flour mixture.
Dip the floured steaks in the egg wash.
Coat the steaks with the mixed seeds.
In a frying pan, cook the bison over medium heat for 3 to 4 minutes per side.
Suggestion
For well-done bison, lower the heat so the sesame seeds don’t burn.
Accompaniments: mixed Oriental vegetables and rice noodles.
Medium or full-bodied red wine.
