Recipe ingredients

  • 2.2 lbs. (1 kg) sauerkraut
  • ½ cup (125 mL) chopped onions
  • ¼ cup (60 mL) Irresistibles extra-virgin olive oil*
  • ½ cup (125 mL) dry white wine
  • 1 Treebu dry beer
  • 2 tsp. (10 mL) juniper berries
  • 1 tsp. (5 mL) Irresistibles whole peppercorns*
  • 1 sprig of fresh thyme
  • 2 Irresistibles bay leaves*
  • ½ lb. (225 g) smoked side of pork (slab of bacon)
  • 4  pork chops ½ inch ( 1 cm)
  • 4 red deer sausages
  • 4 bison sausages
  • 12 Irresistibles small new potatoes*, boiled al dente

Preparation

Preheat the oven to 275°F (140°C).
Drain the sauerkraut and rinse under a thin stream of cold water for 1 hour.
Drain again and set aside.
In an oven-proof pot, brown the onions in the olive oil over low heat.   Add the sauerkraut. Moisten with the wine and beer. Add the spices and herbs.
Add the bacon, chops and sausages.
Cover and cook in the oven for 1 hour.
Remove the meat and continue cooking for 2 hours.
Put the meat and potatoes into the sauerkraut and cook for 20 minutes.
Serve the dish nice and hot, and accompanied with Dijon mustard.

Suggestion

Make sure to rinse and drain the sauerkraut thoroughly by pressing down firmly in a sieve.
To make sure it doesn’t dry out or change colour, cook sauerkraut with fatty foods.
Accompaniment:  spinach and watercress salad.
Medium or full-bodied white wine
