Recipe ingredients
- 1 tsp. (5 mL) black peppercorns
- 1 tsp. (5 mL) your choice of coffee beans*
- ½ tsp. (2.5 mL) chopped fresh rosemary
- 1 garlic clove, chopped
- 2 Tbsp. (30 mL) extra virgin olive oil*
- 4 ground bison tournedos
- ½ cup (125 mL) reconstituted beef broth*
- 2 Tbsp. (30 mL) reconstituted Irresistibles espresso coffee*
- ½ cup (125 mL) mocha (coffee) yogurt
- Sea salt to taste
Preparation
Grind the peppercorns and the coffee beans. Place in a bowl.
Add the rosemary, garlic and olive oil. Mix well.
Baste the bison tournedos with the oil-coffee mixture.
In a frying pan, cook the meat over medium-high heat for 3 to 4 minutes per side.
Remove the meat and keep warm.
In the frying pan, add the remaining oil-coffee mixture.
Deglaze with the beef broth and add the espresso coffee. Reduce by half.
Add the yogurt a little at a time. Do not allow to boil.
Correct the seasoning.
Serve the tournedos topped with the sauce.
Suggestion
Accompaniments: pilaf rice and carrots Vichy (boiled in water with butter and sugar).
