Recipe ingredients
- 2 Tbsp. (30 mL) olive oil*
- 3 lb. 5 oz. (1.5 kg) side ribs
- Salt and pepper to taste
- 4 tomatoes, peeled, seeded and cut into cubes
- 1 bay leaf
- 1 garlic clove, crushed
- 1/4 green pepper, chopped finely
- 1 Tbsp. (15 mL) drained capers
- 12 pitted black olives*
- 1 tsp. (5 mL) dried tarragon
- 1 tsp. (5 mL) dried basil
- Pepper to taste
Preparation
Preheat the barbecue to medium-high.
Baste the side ribs with the oil. Season with salt and pepper.
Cook 15 minutes per side. Turn the meat without piercing. Keep warm.
In a saucepan, heat the olive oil, add the tomatoes and bay leaf, and cook to medium-high. for 20 minutes.
Add the garlic, green peppers, capers, and black olives. Cook for 5 minutes. Remove from the heat and add the tarragon and basil.
Slice the grilled meat and transfer to a heated serving platter.
Suggestion
Here’s an easy way to peel a tomato. Make a cross-shaped cut at the bottom, plunge the tomato into boiling water for 10 to 30 seconds, place under cold water and remove the peel at the incision points.
Accompaniment: mixed wild rice and white rice.
Medium or full-bodied red wine.
