Recipe ingredients
- 3 Tbsp. (45 mL) peanut oil
- 1 lb. (450 g) cubed veal
- Pepper to taste
- 1/4 cup (60 mL) sugar
- 2 Tbsp. (30 mL) cold water
- 1/4 cup (60 mL) Tamari sauce
- 1/2 cup (125 mL) prepared pure orange juice with pulp
- 2 cups (500 mL) white mushrooms, quartered
- 1 Tbsp. (15 mL) fresh lemon juice
- 1 bag of prepared minced leeks
- 2 cups (500 mL) cooked rice vermicelli
Preparation
Heat oil in a wok, add veal cubes and pepper and sear over high heat.
In a small pan, caramelize sugar and water and pour over veal cubes.
Add Tamari sauce and orange juice, mix well and cook 4 to 5 minutes. Set aside.
Drizzle oil into the wok, sauté the mushrooms, sprinkle with lemon juice and add minced leeks. Cook 1 to 2 minutes.
Suggestion
To keep mushrooms firm and white, refrigerate in a brown paper bag without washing. Simply wipe or brush clean.Origin: Chinese
