French Style Roast on Egg Noodles with Carrot Mustard

Recipe ingredients
- ¼ cup (60 mL) thinly sliced onions
- ½ cup (125 mL) carrots cut into rounds
- 1 lb. 12 oz. (800 g) French style roast
- ¼ cup (60 mL) Dijon mustard*
- 1 Tbsp. (15 mL) fines herbes blend (thyme, rosemary, oregano)
- 1 ½ cups (375 mL) egg noodles*
- 2 cups (500 mL) Iresistibles vegetable broth*
Preparation
Preheat the oven to 500°F (260°C).
Line the bottom of a small deep roasting pan with the onions and carrots.
Place the roast on the vegetables.
Brush the meat with the Dijon mustard and sprinkle with the fines herbes.
Roast for 15 minutes.
Lower the oven temperature to 350°F
(180°C).
Surround the roast with the noodles.
Pour the broth to cover the noodles.
Roast for 20 minutes, checking regularly that there’s enough liquid to cook the noodles.
Remove the roast and noodles from the oven. Carve the roast and serve with the noodles and vegetables.
Suggestion
Cover the cooked roast with a perforated sheet of aluminium foil for 5 to 10 minutes to prevent too much juice from being released when carving.
Accompaniments: green peas à la française and cubed acorn squash.
