Oriental Chicken Noodle Soup with Shiitake Mushrooms

Recipe ingredients
- 8 oz. (250 g) bean thread noodles
- 8 cups (2 L) chicken broth*
- 1 lb (454 g) skinned, boneless chicken breast*
- 4 diagonal slices fresh ginger
- 1 tsp. (5 mL) salt
- 1 tsp. (5 mL) sugar*
- 4 oz. (125 g) shiitake mushrooms, julienned
- 1/2 cup (125 mL) chopped green onions
- Pepper to taste
Preparation
Soak noodles in a large bowl of warm water for 30 minutes.
Bring chicken broth to a boil, add chicken breast, ginger and mushrooms, and simmer for 20 minutes.
Remove chicken breast. Tear chicken into threads.
Stir salt, sugar and mushrooms into broth. Bring to a boil 5 minutes.
Using scissors, cut noodles into 6 in (15 cm) lengths. Add to soup and remove from heat immediately.
Add torn up chicken.
Sprinkle with green onions and pepper.
Suggestion
To clean mushrooms, gently wipe them with a damp cloth or soft brush.
Rinsing them in water tends to make them soggy and reduce their flavour.
