Recipe ingredients

  • Marinade
  • 1 cup (250 mL) beer
  • 1 Tbsp. (15 mL) soya sauce*
  • ½ tsp. (2 mL) allspice
  • 1 Tbsp. (15 mL) tomato paste*
  • ¼ tsp. (1 mL) savory
  • Salt and pepper to taste
  • 4 pork chops, ¾ in. (2 cm) thick
  • 2 apples, peeled, cored and thinly sliced
  • ¼ cup (60 mL) crushed pineapple*
  • 1 Tbsp. (15 mL) butter
  • ½ tsp. (2 mL) cinnamon
  • ½ tsp. (2 mL) dried mint

Preparation

Celery-root remoulade and fried sweet potatoes.Preheat the barbecue to high.

Thoroughly mix the marinade ingredients and pour over the pork chops.

Marinate for 30 minutes in the refrigerator.

Place the apples, pineapple, butter and cinnamon on a large sheet of aluminium foil folded double.

Shape into a package and seal the ends.

Drain the chops and cook the meat at the same time as the foil package.

Close the cover and grill 8 to 10 minutes or to taste.

Turn the chops 3 or 4 times as they cook.

Baste and season well. Turn the foil package once.

Suggestion

Make cuts into the fat around the meat to prevent it from curling up while it cooks.

Accompaniments:  celery-root remoulade and fried sweet potatoes.

Medium or full-bodied white wine, or light red wine.
