Recipe ingredients

  • 1 Tbsp. (15 mL) olive oil*
  • 1 chicken breast roast stuffed with pork
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 1 cup (250 mL) reconstituted chicken broth*
  • 1 Tbsp. (15 mL) strong mustard*
  • ½ cup (125 mL) thinly sliced mushrooms

Preparation

Preheat the oven to 350°F /180°C.

In a frying pan, heat the oil.

Sear the pork-stuffed chicken on all sides.

Add the remaining ingredients.

Cover and roast in the oven for 30 minutes.

Suggestion

Let the meat rest for a few minutes before carving to get nicely cut slices.

Accompaniments:  bean sprouts and spinach. New potatoes with chives and lemon zest.

Full-bodied white wine. Or light or medium-bodied red wine.
