Recipe ingredients

  • 8 cups (2 L) lightly salted water
  • 2 lb. (900 g) fresh pork side ribs
  • 1 onion, cut into quarters
  • 1 bouquet garni (parsley, bay leaf, thyme)
  • Salt and pepper to taste
  • Barbecue glaze
  • 3 Tbsp. (45 mL) extra-virgin olive oil*
  • ½ cup (125 mL) red wine
  • ½ cup (125 mL) brown sugar*
  • 1 cup (250 mL) fresh or frozen raspberries
  • 2 Tbsp. (30 mL) Worcestershire sauce
  • 1 cup (250 mL) medium-spicy spare rib sauce*

Preparation

In a saucepan, bring the water to a boil.

Add the ribs, onion, bouquet garni, salt and pepper.

Let simmer for 45 minutes. Drain and set aside.

Preheat the barbecue to medium.

In a glass bowl, mix the barbecue glaze ingredients.

Place the ribs on a sheet of oiled aluminium foil and baste them with the glaze.

Cook 5 to 7 minutes per side.

Suggestion

When preparing the barbecue glaze, you can use port instead of red wine.

It’s best to oil the barbecue grill to prevent food from sticking to it.

Accompaniments:  green salad and rice with vegetables.

Light or medium-bodied red wine.
