Recipe ingredients
- 2 Tbsp. (30 mL) chopped, dried shallots
- 1 Tbsp. (15 mL) extra-virgin olive oil*
- 1 Tbsp. (15 mL) dried cranberries
- 1 Tbsp. (15 mL) chopped dried apples
- 1 Tbsp. (15 mL) raisins
- 1 Tbsp. (15 mL) chopped dried dates
- 1 Tbsp. (15 mL) chopped dried figs
- 1 Tbsp. (15 mL) chopped plain pistachios
- 1 Tbsp. (15 mL) chopped almonds
- 1 cup (250 mL) red wine
- 2 cups (500 mL) reconstituted beef broth*
- 2 lb. (900 g) veal roast
- 1 garlic head, cut in half
- Salt and ground white pepper
- 1 Spanish onion, thinly sliced
- Sufficient quantity, cornstarch*
- Sufficient quantity, water
Preparation
Preheat the oven to 500°F/ 260°C.
Brown the shallots in the oil. Add the dried fruits and nuts. Cook for 1 minute.
Incorporate the red wine and reduce by half.
Add the beef broth and let simmer.5 minutes. Set aside.
Rub the veal roast with the garlic.
Season with the salt and pepper.
In a roasting pan, place the veal and pour in ¼ cup (60 mL) of broth with the fruits and nuts over the sliced onion.
Cook in the oven for 15 minutes.
Lower the heat to 350°F / 175°C and cook for 1 hour to 1 hour and 15 minutes.
Frequently baste the roast with the broth during cooking.
Remove the roast from the pan. Set aside.
Add the pan drippings to the sauce and bring to a boil.
Thicken with the cornstarch dissolved in a little water.
Adjust the seasoning.
Slice the roast and serve with the dried fruit sauce.
Suggestion
The bed of thinly sliced onion keeps the roast from sticking to the pan drippings. A bed of carrots and celery will do just as well.
Accompaniments: okra with poppy seeds and brown rice with walnuts.
Light or medium-bodied red wine.
