Recipe ingredients

  • 4 horsemeat tournedos
  • 2 garlic cloves, chopped
  • 3 Tbsp. (45 mL) vegetable oil*
  • 2 Tbsp. (30 mL) dried thyme
  • 2 red apples, cut into very thin slices
  • 2 Tbsp. (30 mL) balsamic vinegar*
  • ½ cup (125 mL) apple juice*
  • A pinch of ground cinnamon
  • Salt and pepper to taste

Preparation

In a glass bowl, mix the horsemeat tournedos, garlic and 2 Tbsp. (30 mL) of the oil.
In a frying pan over medium-high heat, heat the remaining oil. Lightly sear the tournedos on each side.
As soon as the meat has browned, spread out the apple slices on top, then pour in the balsamic vinegar and apple juice.
Sprinkle on the cinnamon, salt and pepper. Cover.
As soon as the sauce starts boiling, lower the heat to medium-low and cook for 5 to 6 minutes.
Remove from the heat and let rest uncovered for 2 to 3 minutes before serving.

Suggestion

Avoid piercing the meat while it cooks to prevent any loss of juices.

Accompaniments:  fettuccine and thinly sliced leeks.

Medium or full-bodied red wine.
