Recipe ingredients
- 4 x 4oz. (4 x 120 g) turkey tournedos
- 10 pearl onions
- 1 cup (250 mL) reconstituted chicken broth*
- ¼ cup (60 mL) prune juice*
- Zest of 1 lemon
- 12 pitted prunes*, chopped
- 12 dried apricots, chopped
- Salt and pepper to taste
Preparation
In a saucepan, sear the turkey tournedos in a mixture of oil and butter.
Add the onions and continue cooking without browning them.
Add the remaining ingredients and mix well.
Bring to a boil, then lower the heat, cover and continue cooking for 10 minutes, or until tender.
Suggestion
Cooking turkey over low heat will prevent the meat from drying out.
Accompaniments: snow peas, red bell pepper and saffron-scented potato sticks.
Full-bodied white wine, or light or medium-bodied red wine.
