Recipe ingredients
- 8 mackerel fillets (allow 2 per person)
- 3 shallots or 1 onion
- 2 Tbsp. chives
- 1 small bunch of parsley
- 3 Tbsp. olive oil
- 4 Tbsp. cider vinegar or mustard
- 4 rectangular sheets of thick aluminium foil
Preparation
Pre-heat the oven to 375ºF (190ºC).
Chop the shallots (or onion), parsley and chives.
Mix the chopped herbs with the olive oil.
Place 2 mackerel fillets in the centre of each foil rectangle and spread some of the chopped herb mixture on top.
Add 1 Tbsp. of cider vinegar or mustard to each set of 2 fillets.
Fold the edges of the foil to make a tightly sealed package and place in the oven; bake 15 minutes for thawed fillets, and 25 minutes for frozen fillets.
Suggestion
