Recipe ingredients
- 8 mackerel fillets (allow 2 per person)
- 2 onions
- 2 cloves of garlic
- 3 tomatoes
- 10 pitted black olives
- 1 lemon
- 2 Tbsp. butter
- 4 Tbsp. olive oil
- ½ cup white wine
- Salt and pepper to taste
Preparation
Pre-heat the oven to 375ºF (190ºC).
Cut 1 lemon into medium-thick rounds.
Coarsely chop the garlic, onion and olives.
Cut the tomatoes into rounds; cover an oven-proof dish with a bed of tomatoes.
Place the mackerel fillets on top of the tomatoes. Season with salt and pepper.
Place 1 lemon round and a little butter on each fillet.
Drizzle the fish with the wine and oil.
Bake 15 minutes for thawed fillets, and 25 for frozen, regularly basting with the cooking juices.
Suggestion
Serve with rice and mixed vegetables.
