Camembert, Apple and Date Bundles

Recipe ingredients
- 1/2 cup (60 mL) water
- 1 Royal Gala or Fuji apple, sliced thin
- 6 pitted dates*’ sliced thin
- Pinch of garam massala (spice blend)
- 3 1/2 oz. (100 g) butter*, melted
- 4 sheets of phyllo dough
- 1 small Quebec camembert or brie
Preparation
Preheat oven to 400°F (200°C).
In a saucepan, poach apple slices and dates, add garam massala and continue cooking until all water has evaporated. Cool and set aside.
Brush a sheet of phyllo dough with butter.
Place a second sheet over the fi rst and brush with butter. Place third sheet over the other two and brush with butter. Top with fourth sheet and brush with butter.
In the centre of the dough, put some apple slices, dates, and then the cheese,
and top with remaining apple slices.
Fold each sheet of phyllo dough over the cheese and fruit, twisting the last sheet closed like a hobo’s bundle. Brush with butter.
Bake the bundle on a buttered baking sheet for 15 minutes.
Bring to the table whole, and cut into 4 pieces to serve.
Suggestion
Wrap leftover cheese, but not too tightly, in parchment paper or waxed paper then in foil.
Store them in the refrigerator and avoid stacking them.
